Salty Cheese Potato Train

Salty Cheese Potato Train: the meal that inspired the mega-hit. I could wax poetic about this delicious potato train all day, but you should just make it. It takes a long time to cook, for how quickly you will consume it, but it’s well worth the wait.

Get Your Shit Together

  • White Potatoes 3-4 medium
  • Olive oil, 1/4c + a little more for brushing on top
  • salt to taste
  • cheese of choice 1/2-1 cup depending on personal cheesiness threshold
  • powdered garlic if you fancy
  • cast iron skillet or Dutch oven

Do It

Preheat oven to 350. Slice potatoes into 1/2” discs. Pour olive oil into skillet or pan. Lay potatoes flat against the bottom and brush or spray the tops with oil. Cook for 1 hour or until browned. Poke a potato with a fork to make sure they’re cooked. If they’re not fully cooked, continue to bake until soft. Remove from oven and carefully extract the potatoes from the pan, then layer them in a fancy circle, like a train, obviously, add salt and other spices if you please (pepper, garlic, paprika, etc.) along with grated or crumbled cheese. Put back into hot oven and allow cheesiness to melt over potatoes to your satisfaction. Lift the whole mess onto a plate and allow to cool for at least 5 minutes so the burns on your tongue will be less severe as you shove them into your face hole.

Salty cheese potato train serves 2-4 as a side dish, or a meal for one very ambitious, hungry person. Choo choo!
