Gluten-free baking is an art mastered over time, after many terrible baked goods have been lovingly served to those nearest and dearest to the baker. This relentless process of trial and error and the eating of too many baked abominations makes zeroing in on a perfect recipe all that much sweeter.
These Delightful Almond Bars are just sweet enough and have a good, toothsome mouthiness. They’re more delightful than anything on earth, including kittens and babies and wind chimes.
Get Your Shit Together
- 2.75 c almond flour
- 1/4 c starch (I use tapioca)
- 3/4 c sugar
- 1.5 tsp baking powder
- 1 tsp salt
- 1.5 tsp xanthan gum
- 2 tsp vanilla extract
- 1/2 c butter
- 2 large or 3 small eggs
- 1-2 c chocolate chips optional, and highly recommended
- vegetable shortening for greasing
- optional chocolate drizzle: 1 c chocolate chips and 1T shortening
Now Do It
Preheat oven to 350F.
Blend dry ingredients together, then add wet ingredients. Blend with a stand mixer or by hand for a minute or so to work the xanthan gum. Make sure the mixture is completely homogenous. It’ll be a thick, wet batter. Add the chips last.
Lightly grease a silpat or cookie sheet with shortening. Use a spatula to spread the mixture evenly over the surface of the sheet, about 3/4” thick. This will be about 6” by 8-9” and will not reach all the way to the edges of the sheet. Bake for about 25 minutes at 350F. The edges will be crisp and the center will be dense and chewy. Let the sheet cool for at least 20 minutes before cutting. Let them cool completely if you want to add drizzle before cutting.
If you’re adding chocolate drizzle, melt the chocolate chips and shortening in a microwave safe mug for 20 seconds, then in increments of 10 seconds more each time, if additional melting is needed. Stir well between each heating. This can also be done in a double boiler, and if you’re using a double boiler, you probably already know what you’re doing, so I’m not going to include detailed instructions. Melt the chocolate mixture and drizzle over top of bars with a fork or spoon until you’re satisfied.
