Badass cupcakes are an all-around useful and tasty cake and cupcake base mix that’s not quite white, not quite yellow. Makes one 9″ cake. Double the recipe for a layered cake. Perfect homemade cake that even a beginner can master. Once you put this together a couple times, you won’t forget the recipe.
Get Your Shit Together
- 1.5c flour*
- 1/2 c butter
- 3/4 c sugar
- 1/2-1 c milk, juice, or water
- 1 egg or egg sub
- pinch salt
- 1.5 tsp baking powder
- 1 tsp binding agent, if needed (for gluten free bakers: xanthan or Guam gum)
*for gluten free, use 1.25c white base + 2T each of coconut four and almond flour
Now Do It
Preheat oven to 350F.
Cream butter and sugar with a hand or stand mixer on high until it’s light and fluffy. Add vanilla, egg, beat on high until well incorporated. Mix dry ingredients well and add to mixer. Beat on high for a couple minutes. Add to greased and floured or sugared 9″ pan and bake for about 27 minutes at 350. Do a toothpick test to make sure the center is baked through before removing from oven. Should be golden brown on the top.
Wait for the cake to cool until frosting.
